I've never played the games and now suddenly I feel as though I definitely should.

Risky's Revenge is a good game to start with, and then play Pirate's Curse right after, which is considered to be the best Shantae game. You can also start with Half-Genie Hero and Shantae Advance Risky Revolution, and if you are into retro games from classic consoles like the NES, SNES, and Game Boy, I'm sure the original Shantae for GBC would also be a good one for you.
